How to Safely Defrost Chicken

Proper defrosting is critical for food safety. Chicken must be thawed at temperatures that prevent bacterial growth (below 4°C / 40°F). The USDA recommends three safe methods: refrigerator thawing, cold water thawing, and microwave thawing.

Refrigerator Thawing (Recommended)

The safest and most hands-off method. Place frozen chicken on a plate or tray on the lowest refrigerator shelf. Allow 24 hours per 2.3kg (5 lbs). Once thawed, chicken remains safe for 1-2 additional days before cooking.

Cold Water Thawing (Faster)

Submerge chicken in its sealed packaging in cold tap water. Change water every 30 minutes to maintain cold temperature. Cook immediately after thawing. Approximately 1 hour per pound.

Microwave Thawing (Fastest)

Use defrost setting (30% power). Cook immediately after thawing as some areas may begin to cook during the process. Not recommended for large whole chickens due to uneven thawing.

USDA Food Safety Guidelines

  • Never defrost chicken on the counter at room temperature
  • Never defrost in hot water
  • Cook chicken immediately after cold water or microwave thawing
  • Refrozen chicken (thawed in fridge only) is safe but may lose quality
  • Chicken thawed in the refrigerator can be kept for 1-2 days before cooking
